Chocolate Sandwich Melt with Vanilla Ice Cream

A good friend reminded me of this dessert a few weeks back, and after having just savouring a plate, I’m grateful for the reminder!

If you’re feeling a little less than motivated but have a craving for something sweet, this chocolate sandwich melt is just about the easiest dessert ever

I love the hot and cold contrast and the slight fruity tang from the bread, followed by a considerable hit of sweetness from the oozing chocolate that comes in a little bit after the ice cream

I made this with a cinnamon fruit loaf, but you can use any kind of spicy fruit loaf combination, I’ve also made this many times with panettone bread

Ingredients:

Good quality milk chocolate

Good quality vanilla ice cream

Spicy fruit loaf

Method:

Lightly grease a griddle pan and place on a medium heat (too hot and the chocolate will cook)

Place a layer of chocolate between two slices of bread so that it covers the majority of the bread (don’t slice too thick otherwise you risk burning the bread before the chocolate has melted)

Toast the bread on the griddle, turning once

Cut the bread in half and serve immediately with a scoop of ice cream

Total Time: about 10 minutes
